Roasted Garlic, Onion & Mushroom Soup

- 1 bulb garlic
- 1 onion
- 1 punnet mushrooms, white or brown
- 1 glass white white around 100ml
- 600 ml vegetable stock
- 1 tbsp flour, plain
- 1 tbsp butter
- 1 tbsp oil
- 1 pinch black pepper
- cream/sour cream/evaporated milk OPTIONAL
Peel and cut the onion into large chunks along with the garlic bulb cut horizontally in half and place in a preheated oven (180 degrees c fan) for 20 minutes
Place butter, oil, pepper and mushrooms in a saucepan and fry for 5 mins on a high heat
Remove the cloves from the outer garlic bulb and add them along with the onion, wine and stock to the saucepan
Bring to boil and then reduce heat to minimum and simmer for 20-30 minutes
Serve immediately (with cream or desired extra) or leave to cool and store until the next day in a sealed tub in the fridge and reheat
