Guacamole
A superb addition to a Mexican dish or quite simply with bread or nachos!

- ½ onion, diced finely
- ½ lime, juice of
- 1 good pinch salt
- 1 chilli pepper, deseeded and diced finely
- 2 cloves garlic, minced (fat cloves, in my opinion, are best - please remember that I am a lover of garlic though)
- 3 ripe avocados
- 1 tbsp sour cream
- 2 roma tomatoes, deseeded and diced
Please follow this recipe exactly in the order above.
Mix together the onion, lime juice, salt, chilli pepper, garlic and then mash with either a masher or a fork the flesh from the avocado into the other ingredients.
Stir in the tablespoon of sour cream and last of all stir in the chopped up tomatoes.
Don’t feel like you need to be so exact with the measurements I use, you may prefer a little more lime juice or salt (just don’t use too much salt as it isn’t good for your health).
Store in Tupperware in the fridge for up to 3 days.
