Roasted Garlic, Onion & Mushroom Soup Recipe
I am not one that has soup all the time and I don’t probably give it enough credit! I think especially on a cold day, there is nothing better than a warm bowl of soup to make you feel good. What makes soup so perfect, is not only does it taste so delicious.. it is quick and easy! It is a pure win-win and I would always recommend this as a way to put a smile on your face.

Equipment
- hand blender OR processor
Ingredients
- 1 bulb garlic
- 1 onion
- 1 punnet mushrooms, white or brown
- 1 glass white white around 100ml
- 600 ml vegetable stock
- 1 tbsp flour, plain
- 1 tbsp butter
- 1 tbsp oil
- 1 pinch black pepper
- cream/sour cream/evaporated milk OPTIONAL
Instructions
- Peel and cut the onion into large chunks along with the garlic bulb cut horizontally in half and place in a preheated oven (180 degrees c fan) for 20 minutes
- Place butter, oil, pepper and mushrooms in a saucepan and fry for 5 mins on a high heat
- Remove the cloves from the outer garlic bulb and add them along with the onion, wine and stock to the saucepan
- Bring to boil and then reduce heat to minimum and simmer for 20-30 minutes
- Serve immediately (with cream or desired extra) or leave to cool and store until the next day in a sealed tub in the fridge and reheat
