PESTO ROSSO / RED PESTO RECIPE
Now I know that it is so easy to simply buy a jar of pesto and enjoy, but please don’t underestimate how delicious and also easy it is to make your own fresh pesto, too. Personally, I am not a fan of ‘the green one’, so I have only ever thought about and created this all-in-one red pesto recipe (although maybe I am simply yet to be convinced).
The reason why I call it all-in-one is due to the fact I place everything into the food processor and blitz until it is the consistency I would like! Now if that isn’t easy – I don’t know what is…
So this is one of my one cup wonders (with the odd spoon thrown in there as well) and I hope that this is such a success that you will also add this to your regular recipes. I am not denying the fact that I have a few jars of pesto in the storeroom cupboard in case of an emergency (lockdown or quarantine right now come to mind), but if I can and have the bits in, I will always choose my own.
Pesto Rosso / Red Pesto
Equipment
- food processor/blender
Ingredients
- 1 jar (280g) sun-dried tomatoes
- 1 cup (240ml) oil (mix of oil taken from the jar and topped up with either olive or sunflower oil)
- 1 cup mix from a bag of pine nuts (55g) and then topped up with blanched almonds)
- 1 tbsp balsamic vinegar
- 1 tbsp sugar
- 1 good pinch salt
- 4 cloves pressed garlic personal preference here, I am a garlic lover, but you can adjust +/- 2 cloves
Instructions
- Place all the following into a food processor and blitz until you have the consistency required. I like to have a slight crunch from the nuts, but if you would like to have it similar to the jar then feel free to blitz for longer.
That’s it! How easy is that! I then use the jar that the sun-dried tomatoes came in to store the pesto in and usually I also have enough left over additionally to tuck into a bowl of pasta that day. Of course, it is your choice in how much you like per serving, but I would say it would be enough for 5 if you want to use it sparingly.
I would recommend using it in the next week or so and the great thing with pesto is that it goes with so much – so get creative! I often use it for pasta but also will make a pizza and use this as a main part of the sauce.
